- Make the filling:
- Heat olive oil in a skillet over medium heat.
- Sauté onion until soft, then add garlic and spinach. Cook until wilted.
- Season with salt, pepper, and nutmeg. Let cool.
- Mix in feta, mozzarella, and one beaten egg. Set aside.
- Assemble the pastry:
- Preheat oven to 375°F (190°C).
- Roll out puff pastry and cut into squares or rectangles.
- Add a spoonful of filling in the center of each square.
- Fold over to form triangles or rectangles. Seal edges with a fork.
- Brush with egg wash and sprinkle with seeds (if using).
- Bake:
- Place pastries on a parchment-lined baking sheet.
- Bake for 20–25 minutes or until golden brown and puffed.
- Serve warm with tzatziki, marinara, or plain yogurt for dipping!
